Cinnamon Oat and Raisin Cookies

Best for: Snack, Breakfast or any time of day.

Cook time: 15 mins

Crunchy on the outside and chewy in the centre, there is nothing better to have with a cup of coffee.

Step 1

Preheat oven to fan 180 degrees C.

Mix everything together in a bowl.

Step 2

Line a large baking tray with baking paper. Use hands to form mixture into rough balls and place on baking tray, press each cookie down slightly. Ensure not to place cookies too close together as they will expand when cooked.

Step 3

Bake for 13-15 mins, until edges start to turn golden brown. Ovens vary slightly so check on them at 13 mins.

Leave to cool on the tray for around 5 minutes and then transfer them onto a wire rack to cool properly.

 

THE INGREDIENTS

  • 110g rolled oats

  • 40g light brown sugar

  • 40g Coconut oil - melted

  • 35g Raisins

  • 1 egg

  • 2 tsp cinnamon

  • 1 tsp baking powder

  • Pinch of Salt
