Honey Glazed Halloumi Salad with Pomegranate Dressing

Honey Grilled Halloumi with Mint and Pomegranate Salad

The honey on the halloumi caramelises and creates an amazing crunch on the outside and really lifts the saltness of the cheese.

The perfect salad to serve at a BBQ, or even just by itself. It is simply delicious.

Step 1

Cut the halloumi into strips, around 0.5cm thick. You can either BBQ the halloumi, or simply use a pan. If you are BBQ’ing then brush each piece with honey and then grill it for a couple of minutes each side until golden brown.

If you are using a pan, ensure the pan is piping hot and is non stick. Add the cheese to the pan and drizzle the honey over, cook for a couple of minutes each side until golden brown.

Step 2

Slice the cherry tomatoes in half and slice the onion very thin. Dice the avocado and chop the mint.

Add the leaves, avocado, tomatoes, onion, chopped mint and half of the pistachios and pomegranate seeds. Mix in the dressing, careful not to mash the avocado.

Top with grilled halloumi, remaining pomegranate seeds and pistachios, a sprinkle of poppy seeds and a drizzle of pomegranate molasses

 

THE INGREDIENTS

  • 1 pack of halloumi

  • 2 tsp honey

  • 1 bag of leaves

  • 15 cherry tomatoes

  • Half a red onion

  • 1 avocado

  • Half a pomegranate

  • Small bunch of mint

  • 1 tbsp Pomegranate mollasse

    Dressing

    • 1.5 tbsp olive oil

    • Juice of zest of half a lemon

    • 1 tsp honey

    • 1 tsp wholegrain mustard

    • salt and pepper
